Raspberry & Coconut Chocolate Dream Bars

Raspberry and coconut chocolate-covered bars are a delectable fusion of flavors and textures. A harmonious blend of sweet raspberries and tropical coconut is encased in a rich layer of smooth chocolate, creating a satisfying balance between tartness, sweetness, and richness. These bars offer a delightful contrast between the chewiness of coconut and the decadence of chocolate, making them a perfect treat for those seeking a luscious and indulgent snack. Ingredients

  • 2 cups desiccated coconut
  • 190 grams grams of frozen raspberries
  • 2 tablespoons agave syrup
  • 2 teaspoons vanilla extract
  • 250 grams gluten free and dairy free chocolate pieces for the coating

*you could replace the frozen raspberries with frozen blueberries or frozen strawberries.

Instructions

  1. In a food processor add the coconut, raspberries, agave and vanilla.
  2. Using the pulse button pulse the mixture a few times until it all starts to form together.
  3. Remove the container and scoop the mixture into a parchment line bread pan. (I used a cake pan, to make mine smaller)
  4. Press and smooth the mixture and them place in the freezer for two hours.
  5. About 10 mins before you remove the mixture from the freezer melt your chocolate pieces in a double boiler or in the microwave.
  6. Remove from the freezer and using the parchment paper lift out the frozen mixture and cut into 7 bars. I cut mine into 2" pieces.
  7. Place 1 piece at a time in the melted chocolate and place on parchment paper until the chocolate is set.
