  • 2 teaspoons xanthan gum only if your flour doesn't already have it
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 1/4 teaspoons baking soda
  • 1 cup granulated or cane sugar
  • 3/4 cup dairy free milk
  • 1/2 cup plain dairy free yogurt
  • 1/4 cup vegetable oil
  • 1/4 cup freshly squeezed lemon juice
  • zest of 2 small lemons = 1 tablespoon total
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a 9x5 loaf pan.
  3. In a large bowl, combine all of the dry ingredients.
  4. In a separate bowl, combine all the wet ingredients and then add the wet ingredients to the dry, then stir until just evenly mixed. Do not over mix as this will cause your loaf to become dry.
  5. Pour the mixture into the pan and spread evenly. Bake for 50-55 minutes, or until the loaf has risen and a toothpick inserted into the center comes out clean.
  6. If you would like a frosting you can mix 1/2 cup powdered sugar combined with 1 teaspoon dairy free milk of choice.
  7. Enjoy!
